The store-bought toast usually has many additives and has a slightly hard texture. Homemade milk toast without any additives, extremely soft, and capable of forming a silky texture, remains soft for three days! I'm sharing the lazy one-fermentation method, which eliminates complex steps and allows beginners to easily master it.
Ingredients: 250g high-gluten flour, 130g pure milk, 1 egg, 30g fine sugar, 2g salt, 3g yeast, 25g butter.
Steps: Put all ingredients except the butter into the mixing bowl and knead until the dough is initially smooth. Add softened butter and continue to knead to form a thin and elastic glove-like membrane. No need for basic fermentation, directly divide into 3 equal portions, shape them into balls and let them rest for 15 minutes.
After the dough has rested, roll it into a tongue shape, roll it up, relax it for another 10 minutes, then roll it again and place it in the toast mold. Put it in the oven to rise until it is 90% full. Preheat the oven to 180 degrees, bake in the middle rack with both upper and lower heat for 35 minutes. Cover with aluminum foil if the color is too fast.
After coming out of the oven, immediately remove it from the mold and let it cool. The hand-sliced texture is superb, soft and delicate, with a rich milk aroma. It can be eaten directly, or sliced and spread with cream or filled with jam. It is a versatile breakfast item, healthy and delicious.
